INGREDIENTS

STEP 1 - Preparation

  1. Prepare 3 beaten eggs, be as gentle as possible when whip the eggs to prevent too many air bubbles in the egg.
  2. Add same amount of cold water to whip with the beaten eggs.
  3. Cut the crab stick to 2cm long.
  4. Mix crab stick and 1/2 tea spoon of salt with beaten eggs.

STEP 2 - Steam egg custard

  1. Pour 500ml water into the wok.
  2. Raise the dish above the water by using a wire rack.
  3. Turn medium heat to boil the water then turn it to low heat.
  4. Place the dish on the wire rack and cover the wok by lid.
  5. Steam the eggs for 5-10 minutes.
  6. Make sure using a low to medium heat to steam the eggs.
  7. Once you see the surface of egg is coagulate, you can check is it fully cooked by putting a chopstick at the middle of egg.
  8. The timing is the most critical part, DO NOT cook it overtime.

STEP 3 - Egg custard Sauce

  1. Heat the oil in a pan over medium heat.
  2. Pour over the heated oil on the steamed egg.
  3. Then pour 2 spoon soy sauce over the egg.
  4. Enjoy.
